1. Agua de Valencia
What do we need?
1 bottle champagne,
6 cups fresh orange juice,
1 cup Cointreau,
vodka,
gin and sugar.

2. Paella
Typical dish in all Valencia.
What do we need?:
1 medium chicken 1 medium rabbit
2 medium ripe chopped tomatoes
165 grs. wide green bean ( spanish-bachoqueta)
130 grs. large white lima beans ( spanish-garrafon)
1 level teaspoon of saffron
3 cups of spanish rice
8 cups of hot water or ( even better chicken broth)
olive oil ( enough to cover the bottom of the paella pan)
salt ( to taste)
1 level teaspoon of sweet red paprika
Preparation:
1. Put the paella pan on the stove
2. Add the oil slowly
3. Add salt and mix with oil
4.Add the chopped chicken and rabbit
5. Dice the tomato
6. Add the green beans and white beans
7.Make a hole in center with spoon and then add the tomato. Mix.
8.Add pepper
9. Add water
10. when it starts to boil (at 15 min approx.) Put in saffron
11. Finally add the rice and
12. Cook for the first 5 minutes over high heat
13.then turn down the heat andLet the pan simmer slowly until the water is almost gone.
14. Turn off heat and if there is still some raw rice, cover with paper for 10 min so it absorbs the steam.
3. Spanish Omlette (Tortilla Espanola)
What do we need??
-Eggs
-300 g of potatoes
-Olive oil
-Salt
-1 / 4 Onion
Preparation: :
1. Wash and cut potatoes into thin slices.
2. Place two fingers of heating oil in the pan
3. Toss the potatoes and add a pinch of salt
4. Cut the onion into very small pieces
5. Then mix in with potatoes
6. When they are cooked, remove the oil in a sieve
7. Pour the beaten eggs and mix well
8. Once it curds, put on a lid and flip it around until both sides browned.
4. . Pumpkin Fritters (Buñuelos de calabaza)
What do we need?:
A pumpkin
- 1 kilo
- a kilo of flour
-40 grams yeast
-Eggs
Preparation: :
1. Boil or grill the pumpkin in the oven
2. Clean the pumpkin of all pips and seed
3. Crush until a thick paste is formed
4. Make another paste with flour, sugar, yeast and water from the pumpkin
5.In a skillet Mix the the two pastes together then leave to rise for 2 hours
6. When very hot separate into pieces and with your finger and make a hole on each piece.
7. Once browned, take them out and smear them with sugar
5. Arròs al forn
What do we need?:
-400 gr. bomba rice
-1 / 4 kg. rack of pork
-1 onion sausage(pudding)
-1 tomato
-1 potato
-1 head of garlic
-Saffron or dye
-1 lt. Chicken stock with chickpeas
- Clay casserole
Preparation:
1.Heat the oven
2. Heat casserole and fry the garlic head, ribs and bacon.
3. Once browned, add rice + beans and fry
4. Add potatoes (thick slices) + Fry sausage
5. Add saffron broth cooked or dye
6. Bake at 200 º
7. Cook for 40 minutes
8. Remove and let stand 5 minutes.
